Tomato soup

Description

Best served with a buttery piece of toast. Or bread sticks. Bread sticks are always good.

Ingredients

  • 400g of tomatoes (diced)
  • 2 yellow onions (diced)
  • 1 garlic clove (diced)
  • 1 celery stick (diced)
  • 1 carrot (diced)
  • Bay leaf (dried, to taste)
  • Thyme (dried, to taste)
  • 1l vegetable stock
  • Butter

Instructions

  1. Put a large pot over medium heat and add butter.
  2. Add onions, garlic, carrot, celery and tomate paste and tomatoes, each time waiting for a couple of minutes in between en stirring occasionally.
  3. Add vegetable stock and seasonings and boil for 30 minutes.
  4. Remove bay leaves and blend to desired consistency.
