Pancakes

Breakfast, lunch and dinner, this recipe works anytime of the day.

Ingredients
- 200g flour (preferably patisserie-style flour)
- 500ml milk
- 50g butter (melted)
- 2 eggs
- 1 vanilla pod
- Pinch of salt
- Peanut oil
Instructions
- Combine flour, milk, eggs, butter, salt and vanilla seeds scraped from pod and mix in a large bowl. The mixture should be very runny.
- Heat a large pan over high heat and add peanut oil.
- Fill the pan with a ladle, the mixture should cover the pan in a tin film.
- Flip when sides begin to lift from the pan and the underside is golden.
- Bake on the other side until golden.
